"Brings world class dining to Old Bar"

Well-travelled, calm under pressure, collected and inspired. Dave Clifton is chef with over twenty years’ experience in Sydney’s world class dining scene.  A keen surfer and soon to be a familiar face in the local surf spots “nothing beats waking up to the sound of the ocean” says Dave who has recently moved his family to Wallibi Point to start their new life, in their dream home by the beach.
 
When they say he brings world class dining to Old Bar, they’re not kidding! 
 
He’s cooked for the likes of Laurence Fishburne, Leo Sayer, Nicole Kidman, Kylie Minogue, Kanye West and Flea from the Red Hot Chili Peppers.
 
Finding Dave is a real coup for Dave and Stephen, his experience has already brought Flow Bar dining to the next level.
 
Dave spent time working in a variety of hatted, iconic Sydney restaurants such as Hugo’s Bondi, a celebrity hot spot and ’hatted’ fine dining restaurant owned by celebrity Chef Pete Evans, the Bondi Trattoria or 'The Tratt', a local haunt specialising in contemporary Italian cuisine, a staple in the Sydney restaurant scene being open for 25+ years and local gem Deviate Restaurant, a Clovelly local cafe during the day and a share style Mediterranean restaurant by night.
 
Since arriving at Flow Bar, just prior to the October Long Weekend, Dave has been busy meeting local suppliers, sourcing fresh produce and developing a new menu. Inspired by the season, the ocean and local produce you can expect a well-balanced and lighter menu with hints of chilli and acidity.
 
“I’ve always enjoyed the share plate style of eating, countries like Asia and South America do this well, the way they eat, with everything brought out at once and shared really brings people together and makes more of a memorable experience. It’s something that I’d like to bring to Flow Bar in the future”, says Chef Dave. The new menu also caters for gluten free folk and is set to launch this Friday 21 October. His top menu picks are the Mussels, Tomahawk Ribeye Steak, Pork Balls and Ribs.
